Khao Phad Talay
(Seafood Fried Rice)



Ingredients

1) 4 tablespoons vegetable oil
2) 2 cloves garlic, finely chopped
3) ¼ cup onions, chopped in small pieces
4) ¾ lb (340 grams) precooked shrimp,crap
    squid, lobster, etc.
5) 4 eggs, mixed and set aside.
6) 2 tablespoons fish sauce.
7) 1 tablespoons sugar
8) 30 oz (850 grams) rice, cooked and chilled
     separated by rubbing between palms
Garnish
Cucumber slices, coriander leaves,tomato
wedges, lime wedges

 

Preparations

1.Heat work or pan: add oil by dribbling down the
   edge of the work
2. When the oil is hot, add the garlic and onions,
   cookinguntil the garlic begins to brown
3. Add the seafood and cook until it is barely heated
4.Make a well in the ingredients and add the eggs.
  Cook until set and then toss several times so
   that the egg breaks into small pieces.
5.Add the fish saauce and sugar ; stir.
6.Add the rice and stir-fry until thoroughly heated    and ingredients mixed.
7. Transfer to the platter and add the garnish.
